Santuario Sul was born 9 years ago, applying all the techniques, layouts and experience from Santuario Farm, Colombia. Eighty percent of the farm was planted with Yellow bourbon, Also, a coffee garden was planted with several varietals including : Gesha, Sudan Rume, SL 28, Yirgacheffe, Pink Bourbon, Ethiopian Heirloom, etc. Santuario Sul processing-methods are supervised every year by Santuario Project staff. 

Natural Fermentes 72h Process

-Cherries are harvested above 23ô brix's.

-Cherries are soaked in water for 5 hours.

-Anaerobic fermentation on tanks for 72 hours.

-Coffee is sun-dried on African beds for 18 days until humidity is 10.5 % .

-Final humidity stabilization for 8 days inside a warehouse, then coffee is finally stored on grain-pro bags.

-After the total final stabilization coffees are cupped and lots organized.
