Santuario Sul emerged nine years ago by applying tried-and-true techniques gleaned from Santuario Farm in Colombia. As much as 80% of Santuario Sul is dedicated to Yellow Bourbon cultivation while allocating space for various other varietals including Gesha, Sudan Rume, SL 28, Yirgacheffe, Pink Bourbon, Ethiopian Heirloom, among others. To maintain meticulous processing standards year after year, Santuario Project personnel actively supervise all aspects of Santuario Sul's operations.

Natural Process

-Cherries are harvested above 22ô brix's.

-Cherries are soaked in water for 4 hours.

-Coffee is sun-dried on African beds for 23 days until humidity is 10.5 % .

-Final humidity stabilization for 12 days inside a warehouse, then coffee is finally stored on grain-pro bags.

-After the total final stabilization coffees are cupped and lots organized.
