Popayan Meseta Cauca (Tableland)
The Cauca state has 90.000 coffee farmers producing excellent coffees. The Popayan Meseta located in the center of the Cauca Region has 43.000 families producing excellent quality coffees. With an altitude of 1.700-1.800 mts above sea level this tableland has the perfect characteristics to develop lively syrup coffee aromas, good sweetness and bright balanced acidity. This region is nestled between the central mountain range (Volcanic Soil), and the west mountain range (Mineral Soil), with temperatures from 12 degrees in the morning to 22 degrees in the afternoon.
Washed Process
- Selective harvest hand-picking.
- Floaters and imperfect cherries are discard.
- Coffee is depulped leaving 15-20% of mucilage.
- Sun drying on African beds for 14-16 days.
- Coffee parchment is constantly moved.
- Coffee dried to 10.5 %.
- Finally coffee parchment is sent to our warehouses for final selection.
- After 5 days lots are cupped and selected for exports.
